TAKEOUT SALAD SMOOTHIE

You know those side salads that come with takeout meals that you never eat? This is the perfect smoothie for them.

Since moving up to Marin, Caden and I have eaten the Puerto Rican neighborhood favorite, Sol Foods, twice now. (We’ve only been here a week!) We’ve been staying with the nicest family, who generously invited us in to be a part of their family while we look for a place to call our own. They introduced us to Sol Foods and we could not be happier. The chicken is insanely tender, beans spiced to perfection, delicious tostones, awesome pique sauce, the list goes on. 

 

However, when you order a combinacion they include one of those rinky-dinky side salads! You know the ones – solely greens with a side of dressing. Not even tomatoes or carrot slices, nothing. Before tossing them, Marci and I questioned whether they would be useful in smoothies. I told her I’d give it a go. Lo and behold, the most unwanted greens make the simplest, most delicious smoothie!

Ingredients

1 cup Almond Milk

1 handful ‘unwanted greens’

1 tsp chia seeds

1 tsp matcha

1 tsp coconut oil

1 banana

1 tbsp peanut butter

1/2 – 1 cup Ice

Bee Pollen (optional)

Directions:

Add Almond Milk to blender, followed by greens, chia seeds, matcha, coconut oil, banana, PB and lastly, ice.

Blend on medium speed until you can no longer see lettuce pieces.

(Optional) Sprinkle on your favorite toppings, mine is bee pollen!

Serve and enjoy!
